The walkable evening
Hotel Plaza Boulevard is the only off-site position in Orlando where you can genuinely leave the car parked in the evening. Disney Springs is within walking distance from most of the hotels there, which gives you dozens of restaurants without a shuttle or a rideshare.
Bonnet Creek has no equivalent. It is a self-contained pocket of resorts, and dinner is either at the hotel or a drive away. For a week that is a genuine difference in the shape of the evenings.
The rest day
Bonnet Creek exists because the resorts there could build what Disney's Value and Moderate hotels do not have: a lazy river, a water slide and a spa. On a seven-night trip with two non-park days, that is what you are paying for and it earns its keep.
The Hotel Plaza Boulevard hotels have ordinary hotel pools. If the week is four park days out of five nights, that is entirely fine and considerably cheaper.
You are choosing between an evening you can walk to and a day you can spend at the hotel. Very few Orlando trips need both, and both cost money.
